I posted a quick snap of my Easter rocky road on Instagram, and although I wasn’t planning on posting the recipe, so many of you asked for the recipe, I thought it would be a silly idea not to, especially with Easter Sunday being tomorrow.
I made this to take into work on the last day before we finished for the long weekend and it went down a treat! What I love about rocky road is that it’s so easy to make and doesn’t require any baking. If you’re looking for ways to use up your Easter eggs or just want to make a bit of a treat, keep reading…
You will need
Makes 12 squares
300g milk chocolate
3tbp golden syrup
150g unsalted butter
175g digestive biscuits, crushed
100g mini marshmallows
1 pack of mini creme eggs
4 creme eggs (keep these in the fridge beforehand!)
2 packs of mini eggs
50g white chocolate
Start by slowly melting the milk chocolate in a heat proof bowl above a pan of boiling water. Make sure you do this slowly so it doesn’t go lumpy! Add the butter and golden syrup and stir until smooth.
Add the digestive biscuits and marshmallows to the chocolate mixture. When it’s slightly cooler, add the mini creme eggs and the mini eggs and mix together. You can add more or less of any of the ingredients here.
Spoon the mixture into a deep baking tray lined with greaseproof paper. Top with more marshmallows and mini eggs. Cut the large creme eggs into thirds and in half and put on top of the rocky road.
Melt the white chocolate and decorate the top. Pop the rocky road in the fridge, ideally overnight, until set. Cut into squares or bars and keep in a cool place.
